A really fabulous late afternoon cooking demonstration and lecture. Roger Saul talked with such great passion about spelt. It is clear that he is absolutely dedicated to growing and nurturing a completely organic and naturally produced product. We could have listened to him for hours. Helen produced a great cooking demonstration using spelt flour for pizza bases, and pearled spelt for a risotto. Everyone agreed that the bran banana muffins we sampled were light, fluffy and delicious; the pizza was truly scrumptious and the bacon and leek risotto was absolutely lovely. All the flavour and so light in texture.  The children enjoyed helping to make the pizzas and it was a really enjoyable event. The pizza was eaten reverently.
